Bali Blue: the Kintamani Highlands

Our Bali Blue grows 1,200–1,600 metres up in the Kintamani Highlands of central Bali, on volcanic soil. Most of it comes from small family farms of a few acres each, where coffee grows alongside citrus trees.
Farmers organized the Balinese way
Growers here organize through Subak Abian, the upland form of Bali's traditional subak farming communities. The subak system is built on Tri Hita Karana, a Balinese philosophy of harmony between people, nature and the divine, and UNESCO recognizes it as part of Bali's World Heritage cultural landscape.
Why it's called “blue”
The cherries are hand-picked, then wet-hulled (giling basah in Indonesian) and sun-dried in two stages on raised beds. Wet-hulling strips the parchment while the bean is still moist, which gives the green coffee a bluish tint and the cup its deep, heavy body. We roast it medium-dark: baker’s chocolate, orange peel, juniper and molasses.
