Bali Blue
Bali Blue — volcanic highlands, wet-hulled, roasted medium-dark.
Grown at 1,200–1,600 m in the Kintamani Highlands of central Bali on volcanic loam, by producers organized through Subak Abian, a traditional structure of farmer organization in upland Bali. Cherries are hand-picked, wet-hulled and sun-dried in two stages on raised beds — the traditional Indonesian method known as giling basah. Roasted medium-dark: baker’s chocolate, orange peel, juniper and molasses.

Brewing
Start with 15 g of coffee per 250 ml (8 oz) of water and adjust to taste. Choose ground for drip and pour-over, or whole bean to grind for your own method. Keep the bag sealed in a cool, dry place.
