Known for its Yellow Honey process, the beans of El Flaco Grande are hand-picked at high altitude and pulped until they are left with a layer of sticky golden mucilage to dry in the sun. Fermentation runs 168 hours in total — 96 in cherry, 72 in mucilage — using roughly 39 litres less water per kilo than a washed process. The result is a cup that's naturally sweet and complex, with notes of honey, caramel, and stone fruit.

Start at roughly 60g of coffee per litre of water (about 2 tablespoons per 6oz cup) and adjust to taste.
Water just off the boil, 195-205F. Grind coarse for French press and cold brew, medium for drip and pour-over, fine for espresso.
Store the bag sealed at room temperature, away from light. Grind just before brewing where you can.
